Ingredients
- 3 Tbsp sherry vinegar
- 3 Tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp freshly cracked black pepper
- 1/2 watermelon (approx. 9 cups), divided
- 1 cucumber, seeded and diced, divided
- 1 red bell pepper, seeded and chopped, divided
- 3 roma tomatoes, seeded and diced, divided
- 1/4 red onion, diced
- 1 jalapeño, seeded and diced small
- 1 Tbsp basil, minced
- 1 Tbsp parsley, minced
Instructions
- In a mixing bowl, whisk together sherry vinegar, olive oil, salt, and pepper until combined.
- In a blender, add 4.5 cups of watermelon chunks, half of the cucumber, half of the red bell pepper, 2 diced roma tomatoes, and red onion. Blend until smooth while slowly adding the vinegar mixture.
- Pour the blended gazpacho into a large container. Stir in the remaining diced watermelon, cucumber, bell pepper, one diced roma tomato, jalapeño, basil, and parsley.
- Drizzle with olive oil and season with additional salt and pepper if desired.
- Chill in the refrigerator before serving for enhanced flavors.
