  • 1 medium spaghetti squash
  • 1 pound boneless, skinless chicken (cut into bite-size pieces)
  • 2 tablespoons butter
  • 4 cloves garlic (minced)
  • 1 shallot (minced)
  • 2 tablespoons sun-dried tomatoes (drained, julienne cut)
  • 1 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 3 ounces baby spinach
  • Salt and pepper to taste

Instructions

  1. Cook spaghetti squash in the microwave for 8–12 minutes until tender. Let cool.
  2. Season chicken with salt, pepper, and Italian seasoning. In a large skillet, melt 1 tablespoon butter over medium-high heat and cook chicken until no longer pink. Remove from pan.
  3. In the same skillet, add remaining butter, garlic, and shallot; cook for 1–2 minutes. Add sun-dried tomatoes.
  4. Pour in heavy cream; heat until bubbly. Stir in Parmesan cheese and spinach until combined.
  5. Cut cooked spaghetti squash in half; remove seeds and scrape strands into sauce.
  6. Mix everything together in the skillet and serve hot.
