  • 2 (5oz) cans of drained tuna
  • 1 medium onion, chopped
  • 1/2 stalk celery, chopped
  • 1 clove garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 34 tablespoons mayonnaise
  • 3 tablespoons extra virgin olive oil
  • 1/3 cup shredded mozzarella cheese
  • Sliced bread
  • Softened butter
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine drained tuna with chopped onion, celery, parsley, minced garlic, mayonnaise, olive oil, and mozzarella. Mix well and season with salt and pepper.
  2. Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
  3. Butter one side of a slice of bread and place it butter-side down in the skillet. Scoop about 2 tablespoons of the tuna mixture onto the bread.
  4. Butter another slice of bread and place it on top of the tuna mixture (butter-side up). Cook until golden brown on one side before flipping to brown the other side.
