  • 4 oz canned green chiles
  • 15 oz black beans (rinsed & drained)
  • 10 oz frozen corn
  • 3 cups shredded Mexican blend cheese
  • 10 oz red enchilada sauce
  • 32 oz frozen tater tots

Instructions

  1. Preheat your oven to 400°F (204°C) and lightly spray a non-stick baking dish.
  2. In a large skillet over medium heat, brown the ground beef with diced onion for 5–7 minutes. Add minced garlic in the last minute.
  3. Stir in green chiles, taco seasoning, black beans, corn, and half of the cheese until well combined.
  4. Transfer the mixture to the baking dish, drizzle with enchilada sauce, then layer frozen tater tots on top.
  5. Bake for 30–40 minutes until tater tots are golden brown. Top with remaining cheese and bake for an additional 2–3 minutes.
