Description

  • 2 tbsp olive oil or butter
  • 1/2 onion (diced)
  • 2 cloves garlic (minced)
  • 1 1/2 lbs ground beef (or turkey, plant-based crumbles)
  • 1 packet taco seasoning
  • 10 oz diced tomatoes with green chiles
  • 1 1/2 cups beef broth
  • 3 tbsp tomato paste
  • 3 oz cream cheese (softened)
  • 12 oz spaghetti (cooked al dente)
  • 1 1/2 cups shredded cheese (cheddar or Mexican blend)

Instructions

  1. Cook spaghetti according to package instructions until al dente; drain and set aside.
  2. In a skillet over medium heat, add olive oil or butter and sauté diced onion for about 3-4 minutes until soft. Add minced garlic and cook for another minute.
  3. Add ground beef to the skillet and cook until browned, about 5-7 minutes. Drain excess fat.
  4. Stir in taco seasoning, diced tomatoes, beef broth, tomato paste, and cream cheese; cook for 2-3 minutes until cream cheese melts.
  5. Remove from heat; toss cooked spaghetti with the mixture along with shredded cheese until well coated.
  6. Serve immediately, garnished with cilantro if desired.
