- 1 packet taco seasoning
- 10 oz diced tomatoes with green chiles
- 1 1/2 cups beef broth
- 3 tbsp tomato paste
- 3 oz cream cheese (softened)
- 12 oz spaghetti (cooked al dente)
- 1 1/2 cups shredded cheese (cheddar or Mexican blend)
Instructions
- Cook spaghetti according to package instructions until al dente; drain and set aside.
- In a skillet over medium heat, add olive oil or butter and sauté diced onion for about 3-4 minutes until soft. Add minced garlic and cook for another minute.
- Add ground beef to the skillet and cook until browned, about 5-7 minutes. Drain excess fat.
- Stir in taco seasoning, diced tomatoes, beef broth, tomato paste, and cream cheese; cook for 2-3 minutes until cream cheese melts.
- Remove from heat; toss cooked spaghetti with the mixture along with shredded cheese until well coated.
- Serve immediately, garnished with cilantro if desired.
