  • Red gel food coloring
  • ½ cup unsalted butter-softened
  • 8 oz. cream cheese-softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla
  • 2/3 cup diced fresh strawberries
  • 2 (3 oz.pckg) berry blue Jello (or other flavor to your taste)
  • 1 and 1/4 cup boiling water
  • 2 cups blueberry pie filling
  • 1 cup of canned crushed pineapple-drained from juice
  • 2 ½ cups whipped cream
  • Fresh strawberries halved
  • Fresh blueberries
  • ¼ cup chocolate chips

Instructions

  1. Prepare the crust by mixing graham cracker crumbs, melted butter, and strawberry jam; press into a 9×13-inch baking dish.
  2. Create the cheesecake layer by beating together softened butter, cream cheese, powdered sugar, and vanilla; fold in diced strawberries and spread over the crust.
  3. Dissolve berry blue jello in boiling water; let cool slightly before pouring over the cheesecake layer.
  4. Top with blueberry pie filling and whipped cream; garnish with fresh berries and refrigerate for at least 3 hours before serving.
