- 3 cups graham cracker crumbs
- ½ cup+ 2 tablespoons unsalted butter-melted
- ¼ cup strawberry jam
- Red gel food coloring
- ½ cup unsalted butter-softened
- 8 oz. cream cheese-softened
- 1 cup powdered sugar
- 1 teaspoon vanilla
- 2/3 cup diced fresh strawberries
- 2 (3 oz.pckg) berry blue Jello (or other flavor to your taste)
- 1 and 1/4 cup boiling water
- 2 cups blueberry pie filling
- 1 cup of canned crushed pineapple-drained from juice
- 2 ½ cups whipped cream
- Fresh strawberries halved
- Fresh blueberries
- ¼ cup chocolate chips
Instructions
- Prepare the crust by mixing graham cracker crumbs, melted butter, and strawberry jam; press into a 9×13-inch baking dish.
- Create the cheesecake layer by beating together softened butter, cream cheese, powdered sugar, and vanilla; fold in diced strawberries and spread over the crust.
- Dissolve berry blue jello in boiling water; let cool slightly before pouring over the cheesecake layer.
- Top with blueberry pie filling and whipped cream; garnish with fresh berries and refrigerate for at least 3 hours before serving.
