Ingredients
- 2 medium butternut squash
- 4 oz cream cheese
- 1 cup shredded Parmesan cheese
- 2 cups fresh spinach (or 1 cup frozen, thawed)
- 8 strips cooked bacon, chopped
- Olive oil
- Salt and pepper
Instructions
- Preheat oven to 400°F (200°C).
- Halve the butternut squashes lengthwise and scoop out seeds. Drizzle with olive oil and season with salt and pepper.
- Place cut-side down on a baking sheet and roast for about 40 minutes until tender.
- While roasting, sauté spinach in olive oil until wilted.
- In a mixing bowl, combine softened cream cheese, Parmesan cheese, sautéed spinach, and half of the bacon; mix well.
- After roasting, flip squash cut-side up and scoop out some flesh to create space for filling.
