  • 2 medium butternut squash
  • 4 oz cream cheese
  • 1 cup shredded Parmesan cheese
  • 2 cups fresh spinach (or 1 cup frozen, thawed)
  • 8 strips cooked bacon, chopped
  • Olive oil
  • Salt and pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Halve the butternut squashes lengthwise and scoop out seeds. Drizzle with olive oil and season with salt and pepper.
  3. Place cut-side down on a baking sheet and roast for about 40 minutes until tender.
  4. While roasting, sauté spinach in olive oil until wilted.
  5. In a mixing bowl, combine softened cream cheese, Parmesan cheese, sautéed spinach, and half of the bacon; mix well.
  6. After roasting, flip squash cut-side up and scoop out some flesh to create space for filling.
  7. Generously fill each half with the cheese mixture and top with remaining bacon pieces.
  8. Return to the oven for an additional 15 minutes or broil for extra crispiness.
