  • 1215 jumbo pasta shells
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese (divided)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups fresh spinach (chopped) or 1 cup frozen spinach (thawed)
  • 2 cups marinara sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil the jumbo pasta shells in salted water until al dente; drain and set aside.
  3. In a mixing bowl, combine ricotta, 1/2 cup mozzarella, Parmesan, egg, spinach, garlic, salt, pepper, and Italian seasoning.
  4. Spread half of the marinara sauce in a baking dish. Stuff each shell with the filling and place them in the dish.
  5. Pour remaining marinara sauce over the shells and top with remaining mozzarella and olive oil.
  6. Cover with foil and bake for 20 minutes; uncover and bake for an additional 10 minutes until bubbly.
