Ingredients
- 1 lb. spaghetti
- 1 can olives
- 10 oz. container cherry or grape tomatoes
- 1 cucumber
- 1 large carrot
- 1 avocado
- ½ cup pepperoncini
- 1 Tbs. Mrs. Dash seasoning salt
- 1 Tbs. lemon pepper
- 8 oz. Roasted Red Pepper Vinaigrette
Instructions
- Cook spaghetti in boiling salted water until al dente, then drain and rinse under cold water.
- Prepare the vegetables: halve the tomatoes, slice the cucumber, drain and halve the olives, grate the carrot, chop the avocado, and slice the pepperoncini.
- In a large mixing bowl, combine cooled spaghetti with all prepared vegetables.
- Add seasoning and vinaigrette; toss gently until well mixed.
- Cover and chill in the refrigerator for at least two hours before serving.
