- 0.75 lb boneless, skinless chicken breasts
- ¼ cup lime juice
- ½ tsp chili powder
- 4 large tortillas
- 1 small red bell pepper
- 1 jalapeño
- 1 cup uncooked rice
- ¾ cup corn kernels
- 1 cup black beans
- ¼ cup cotija cheese
- ⅓ cup sour cream
- 1½ Tbsp honey
Instructions
- Marinate diced chicken in lime juice, olive oil, chili powder, garlic powder, smoked paprika, salt, and chipotle pepper for at least 15 minutes.
- Cook rice according to package instructions.
- Sauté marinated chicken in a skillet over medium heat for about 12–15 minutes until golden brown.
- In the same skillet, sauté chopped red bell pepper, jalapeño, and sliced onion until tender; add minced garlic near the end.
- Assemble each wrap with cooked rice, chicken mixture, black beans, corn kernels, cotija cheese, and drizzle with the sauce made from sour cream mixed with honey.
- Roll each tortilla tightly and serve immediately or wrap for later.
