- 1 cup light brown sugar
- 2 large eggs (room temperature)
- 1 teaspoon vanilla extract
- 1 cup miniature chocolate chips
- 1 ½ cups mini marshmallows
- 2–3 milk chocolate candy bars (broken into pieces)
Instructions
- Preheat your oven to 375°F and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, graham cracker crumbs, baking soda, salt, and cinnamon.
- In a large bowl, beat butter and sugars until light and fluffy. Add eggs one at a time and mix in vanilla.
- Gradually combine dry ingredients with wet ingredients until just mixed; fold in chocolate chips.
- Scoop rounded balls of dough onto prepared baking sheets, spacing them apart.
- Bake for 6-7 minutes until edges start to set. Remove from oven and press marshmallows and chocolate pieces into cookies.
- Return to oven for an additional 3-4 minutes until golden brown; cool on sheets for 5 minutes before transferring to wire racks.
