  • 2 heads cauliflower
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ cup olive oil
  • 1 teaspoon chopped parsley

Instructions

  1. Preheat your oven to 500ºF (260ºC) and adjust the rack to the lower third position.
  2. Remove the outer leaves from each cauliflower head, then slice them in half lengthwise. Cut 1½-inch thick steaks from each half.
  3. In a mixing bowl, combine salt, pepper, garlic powder, and paprika.
  4. Drizzle olive oil over both sides of each steak and sprinkle the seasoning mixture evenly.
  5. Place the steaks on a baking sheet, cover tightly with foil, and roast for 5 minutes. Then remove the foil and continue roasting for another 10 minutes.
  6. Flip each steak carefully and roast for an additional 6-8 minutes until golden brown. Garnish with chopped parsley before serving.
