  • ½ cup seedless raspberry jam (or jam of your choice)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a jumbo muffin pan.
  2. In a mixing bowl, cream together softened butter, powdered sugar, granulated sugar, vanilla extract, and almond extract until light and creamy.
  3. Gradually add flour and salt until just combined.
  4. Scoop about ¼ cup of dough into each muffin well, pressing it into the bottom and up the sides.
  5. Spoon in 1 tablespoon of raspberry jam into each cookie cup.
  6. Crumble reserved dough over the jam filling.
  7. Bake for 18–22 minutes or until golden brown.
  8. Allow cookies to cool before removing from the pan.
