Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners.
  2. In a mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  3. In another bowl, combine the wet ingredients: eggs, pumpkin puree, white sugar, brown sugar, and vegetable oil. Mix until just combined.
  4. Pour the wet mixture into the dry ingredients and stir gently until blended; avoid overmixing.
  5. Fold in chocolate chips.
  6. Spoon batter into muffin tins and bake for about 16 minutes or until a toothpick inserted comes out clean. Allow to cool slightly before transferring to a wire rack.
