Ingredients
- 1 cup Unsalted Butter, room temperature (2 sticks)
- 2 cups All-Purpose Flour
- 1/2 teaspoon Salt
- 1/2 cup Granulated Sugar
- 1/2 pint Fresh Raspberries (or about 1 cup frozen raspberries, thawed)
- 2 1/4 cups Granulated Sugar
- 6 Tablespoons All-Purpose Flour
- 6 Eggs
- 3 Lemons, Juice
Instructions
- Preheat your oven to 350°F (175°C). Prepare a 9" x 13" baking pan by greasing it and lining it with parchment paper.
- Blend raspberries with 1 tablespoon of water until smooth, strain through a sieve to remove seeds, and set aside.
- In a mixing bowl, beat together butter, flour, salt, and sugar until smooth. Press into the bottom of the prepared pan and bake for 15-20 minutes until golden.
- While the crust bakes, whisk together sugar, flour, eggs, and lemon juice until combined. Gradually mix in raspberry puree.
- Pour filling over the baked crust and return to the oven for 25-30 minutes until edges are set. Cool completely before slicing.
