  • 1 cup Unsalted Butter, room temperature (2 sticks)
  • 2 cups All-Purpose Flour
  • 1/2 teaspoon Salt
  • 1/2 cup Granulated Sugar
  • 1/2 pint Fresh Raspberries (or about 1 cup frozen raspberries, thawed)
  • 2 1/4 cups Granulated Sugar
  • 6 Tablespoons All-Purpose Flour
  • 6 Eggs
  • 3 Lemons, Juice

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a 9" x 13" baking pan by greasing it and lining it with parchment paper.
  2. Blend raspberries with 1 tablespoon of water until smooth, strain through a sieve to remove seeds, and set aside.
  3. In a mixing bowl, beat together butter, flour, salt, and sugar until smooth. Press into the bottom of the prepared pan and bake for 15-20 minutes until golden.
  4. While the crust bakes, whisk together sugar, flour, eggs, and lemon juice until combined. Gradually mix in raspberry puree.
  5. Pour filling over the baked crust and return to the oven for 25-30 minutes until edges are set. Cool completely before slicing.
