  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup jelly (grape or strawberry)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the peanut butter, unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually incorporate the dry ingredients into the wet mixture until you have a smooth dough.
  6. Scoop out two tablespoons of dough, flatten it into discs on the prepared baking sheet.
  7. Add about one teaspoon of jelly in the center of each disc.
  8. Top with another piece of dough and press edges to seal. Use a fork for decoration if desired.
  9. Bake for about 12-15 minutes until edges are golden brown.
  10. Allow cooling on the sheet for five minutes before transferring to a wire rack.
