Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the peanut butter, unsalted butter, granulated sugar, and brown sugar until light and fluffy.
- Mix in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually incorporate the dry ingredients into the wet mixture until you have a smooth dough.
- Scoop out two tablespoons of dough, flatten it into discs on the prepared baking sheet.
- Add about one teaspoon of jelly in the center of each disc.

- Allow cooling on the sheet for five minutes before transferring to a wire rack.
