Ingredients
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup jelly (grape or strawberry)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract; mix well.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this mixture to the wet ingredients until a smooth dough forms.
- Scoop out two tablespoons of dough, flatten them into discs, and place half on the prepared baking sheet.
- Add approximately one teaspoon of jelly in the center of each disc.
- Top each jelly-filled disc with another dough disc and press the edges to seal.
- Bake for 12-15 minutes or until golden brown around the edges.
- Allow cooling on the baking sheet for about five minutes before transferring to a wire rack.
