  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup jelly (grape or strawberry)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract; mix well.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this mixture to the wet ingredients until a smooth dough forms.
  5. Scoop out two tablespoons of dough, flatten them into discs, and place half on the prepared baking sheet.
  6. Add approximately one teaspoon of jelly in the center of each disc.
  7. Top each jelly-filled disc with another dough disc and press the edges to seal.
  8. Bake for 12-15 minutes or until golden brown around the edges.
  9. Allow cooling on the baking sheet for about five minutes before transferring to a wire rack.
