- 8 oz grape tomatoes
- 8 oz fresh mozzarella balls
- 2 tbsp olive oil

- Fresh basil (for garnish)
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, and season with salt and pepper.
- Toss grape tomatoes and mozzarella balls in another bowl with salt and pepper; set aside.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Season the chicken breasts with salt and pepper, then sear until golden brown on both sides.
- Pour the balsamic sauce over the chicken and let it simmer briefly.
- Layer the tomato mixture over the chicken.
