  • 1 teaspoon flaked sea salt
  • 1/2 cup corn syrup
  • 1/2 cup unsalted butter

Instructions

  1. In a large saucepan, combine evaporated milk, brown sugar, corn syrup, granulated sugar, and butter. Stir over medium heat until melted and smooth.
  2. Boil for about 3 minutes without stirring until it reaches 235°F (softball stage).
  3. Remove from heat; add vanilla extract and stir gently.
  4. Mix in pecans and shredded coconut until thickened (3–5 minutes).
  5. Allow the mixture to cool slightly before scooping onto parchment-lined baking tray using a cookie scoop.
  6. Leave space between each cookie; sprinkle flaked sea salt on top.
  7. Let cool completely before storing in an airtight container.
