- 1 cup dried red kidney beans (soaked overnight)
- 4 vegan sausages (sliced)
- 1 medium onion (diced)
- 2 stalks celery (diced)
- 1 medium green bell pepper (diced)
- 2 tablespoons Cajun seasoning
- 5 cups vegetable stock
- 1 cup long white grain rice
- Fresh herbs, for garnish (optional)
Instructions
- Heat oil in a large pot over medium heat. Add the vegan sausage slices and cook until browned.
- Sauté the diced onion, celery, and bell pepper until onions are translucent.
- Stir in Cajun seasoning, vegetable stock, bay leaves, thyme, and garlic.
- Drain the soaked beans and add them to the pot. Season with black pepper and optional vinegar.
- Cover and simmer for 1 to 1.5 hours until beans are soft; add water if needed.
- Cook rice according to package instructions separately.
- Mash some beans against the side of the pot to thicken the stew; simmer for an additional 5 minutes.
- Remove bay leaves and serve hot over rice.
