Ingredients

  • 1 cup dried red kidney beans (soaked overnight)
  • 4 vegan sausages (sliced)
  • 1 medium onion (diced)
  • 2 stalks celery (diced)
  • 1 medium green bell pepper (diced)
  • 2 tablespoons Cajun seasoning
  • 5 cups vegetable stock
  • 1 cup long white grain rice
  • Fresh herbs, for garnish (optional)

Instructions

  1. Heat oil in a large pot over medium heat. Add the vegan sausage slices and cook until browned.
  2. Sauté the diced onion, celery, and bell pepper until onions are translucent.
  3. Stir in Cajun seasoning, vegetable stock, bay leaves, thyme, and garlic.
  4. Drain the soaked beans and add them to the pot. Season with black pepper and optional vinegar.
  5. Cover and simmer for 1 to 1.5 hours until beans are soft; add water if needed.
  6. Cook rice according to package instructions separately.
  7. Mash some beans against the side of the pot to thicken the stew; simmer for an additional 5 minutes.
  8. Remove bay leaves and serve hot over rice.
