  • 4 8-ounce lobster tails
  • 1 tablespoon olive oil
  • 1/2 teaspoon coarse kosher salt (divided)
  • 1/2 cup unsalted clarified butter
  • 45 cloves garlic (minced)
  • 1 tablespoon flat leaf parsley (roughly chopped)
  • 2 teaspoons lemon zest
  • 1/4 teaspoon smoked paprika

Instructions

  1. Melt the clarified butter in a small saucepan over low heat. Add minced garlic, lemon zest, parsley, and remaining salt. Stir and heat for an additional minute before removing from heat.
  2. Using kitchen shears, butterfly each lobster tail while keeping it attached at one end. Skewer them lengthwise to prevent curling during grilling.
  3. Brush the lobster meat with olive oil and sprinkle with salt.
  4. Preheat your grill to medium-high heat. Grill the lobster tails meat side down for about 5-6 minutes, then flip and cook for another 1-2 minutes until they turn opaque and reach an internal temperature of 140°F.
  5. Remove from grill and generously spoon over the lemon garlic butter sauce before serving.
