- 1 tablespoon olive oil
- 1/2 teaspoon coarse kosher salt (divided)
- 1/2 cup unsalted clarified butter
- 4–5 cloves garlic (minced)
- 1 tablespoon flat leaf parsley (roughly chopped)
- 2 teaspoons lemon zest
- 1/4 teaspoon smoked paprika
Instructions
- Melt the clarified butter in a small saucepan over low heat. Add minced garlic, lemon zest, parsley, and remaining salt. Stir and heat for an additional minute before removing from heat.
- Using kitchen shears, butterfly each lobster tail while keeping it attached at one end. Skewer them lengthwise to prevent curling during grilling.
- Brush the lobster meat with olive oil and sprinkle with salt.
- Preheat your grill to medium-high heat. Grill the lobster tails meat side down for about 5-6 minutes, then flip and cook for another 1-2 minutes until they turn opaque and reach an internal temperature of 140°F.
- Remove from grill and generously spoon over the lemon garlic butter sauce before serving.
