  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup warm milk
  • 2 1/4 tsp active dry yeast
  • 1 egg
  • 1 tsp vanilla extract
  • 2 cups vegetable oil for frying
  • 1/2 cup sugar for coating
  • 1 cup pastry cream or whipped cream for filling

Instructions

  1. Prepare the yeast mixture by dissolving yeast in warm milk and letting it sit for 5 minutes until foamy.
  2. In a mixing bowl, combine flour, sugar, and salt. Cut in cold butter until crumbly.
  3. Add the yeast mixture, egg, and vanilla to form a soft dough.
  4. Knead the dough for 5-7 minutes until smooth then wrap it in plastic wrap and refrigerate for 1 hour.
  5. Roll out the dough into a rectangle and fold it like a letter three times to create layers.
  6. Cut out doughnut shapes from the layered dough and let them rise for an additional 30 minutes.
  7. Heat vegetable oil to 350°F (175°C) and fry each cronut for about 2-3 minutes per side until golden brown.
  8. Roll the fried cronuts in sugar and fill each with pastry cream or whipped cream before serving.
