  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 1 shallot (chopped)
  • 6 cloves garlic (minced)
  • 2 springs rosemary (chopped)
  • 1/4 cups parsley (chopped)
  • 1/4 cup tarragon (chopped)
  • 1/4 cup cilantro (chopped)
  • 1/4 cup mint (chopped)
  • 2 lemons (juice of)
  • 1/4 tsp smoked paprika

Instructions

  1. Pat the steaks dry and season with salt and pepper. Let them rest.
  2. Preheat the grill and prepare for direct and indirect heat zones.
  3. In a pan over medium heat, melt butter and olive oil, then sauté shallots and garlic until translucent. Stir in chopped herbs, lemon juice, salt, pepper, and smoked paprika.
  4. Grill the steaks on direct heat for 4 minutes per side, then move to indirect heat until they reach an internal temperature of 135°F for medium doneness.
  5. Allow steaks to rest for 10 minutes before slicing against the grain and drizzling with lemon-herb sauce.
