- 1/2 cup unsweetened cocoa powder
- 1/4 cup almond flour
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 tsp baking powder
- Pinch of salt
- Optional: a few drops of stevia or monk fruit sweetener, to taste
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- Mix Wet Ingredients: In a medium bowl, whisk together the Greek yogurt, eggs, and vanilla extract until smooth.
- Add Dry Ingredients: Stir in the cocoa powder, almond flour, baking powder, and salt. Mix until a thick batter forms.
- Adjust Sweetness: Taste the batter and add a few drops of stevia or monk fruit sweetener if desired.
- Transfer to Pan: Pour the batter into the prepared baking dish and smooth the top evenly.
- Bake: Bake for 20–25 minutes, or until the center is just set. Do not overbake.
- Cool & Slice: Let cool completely before slicing into 9 or 12 squares and serving.
Notes
Use full-fat or 2% Greek yogurt for best texture. Avoid overbaking to maintain fudginess. You can store these in the fridge for up to 6 days or freeze for longer storage. Great for meal prep or healthy snacking!
