  • 4 small chicken breasts (about 1 1/4 pounds)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cups cooked rice or quinoa
  • 4 cups shredded romaine lettuce
  • 1 cup sliced red onion
  • 1/2 cup feta cheese
  • Tzatziki sauce (made with Greek yogurt, cucumber, garlic, lemon juice)

Instructions

  1. Prepare the marinade by whisking together olive oil, lemon juice, honey, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes.
  2. Pound the chicken to even thickness and marinate for at least 30 minutes.
  3. While the chicken marinates, prepare tzatziki sauce by mixing Greek yogurt with grated cucumber, garlic, lemon juice, olive oil, salt, and dill.
  4. Cook rice or quinoa according to package instructions and chop vegetables.
  5. Air fry marinated chicken at 380°F for about 10-12 minutes until cooked through (internal temperature of 165°F).
