  • 6 cups fresh cherries, pitted
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • 3/4 cup granulated sugar (for filling)
  • 1/4 cup cornstarch
  • pinch of salt
  • 2 and 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar (for crust)
  • 1 cup unsalted butter, cold & cubed
  • 1/4 cup cold water
  • 1 large egg (for egg wash)
  • 1 tablespoon water
  • 1 tablespoon granulated sugar (for topping)

Instructions

  1. In a saucepan over medium heat, combine cherries, lemon juice, vanilla extract, sugar, cornstarch, and salt. Simmer until thickened (about 10 minutes). Let cool.
  2. Preheat oven to 425°F (220°C) and butter a 9-inch pie plate.
  3. In a bowl, mix flour and sugar; cut in butter until crumbly. Add water gradually; knead into dough, divide into two balls and chill for 30 minutes.
  4. Roll out dough on a floured surface to fit the pie plate. Place one disc in the bottom of the plate.
  5. Fill with cherry mixture, cover with the second rolled-out disc, crimp edges to seal, and cut slits for steam release.
  6. Brush with egg wash and sprinkle sugar on top. Bake for about 60 minutes or until golden brown.
