- 6 cups fresh cherries, pitted
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon vanilla extract
- 3/4 cup granulated sugar
- 1/4 cup cornstarch
- 2 and 1/2 cups all-purpose flour
- 1 cup unsalted butter, cold & cubed
- 1/4 cup cold water
- 1 large egg (for egg wash)
Instructions
- Prepare the cherry filling by combining cherries, lemon juice, vanilla extract, sugar, and cornstarch in a saucepan over medium heat. Simmer for about 10 minutes until thickened then let cool.
- Preheat your oven to 425°F (220°C).
- In a mixing bowl, whisk together flour and sugar. Cut in the cold butter until crumbly; add cold water to form dough. Chill for 30 minutes.
- Roll out half of the dough on a floured surface and place it in a greased pie plate. Pour in the cooled cherry mixture.
- Roll out the second half of the dough to cover the filling. Seal edges by crimping and cut slits in the top crust.
- Brush with egg wash and bake for about 60 minutes until golden brown.
