- 1/2 cup Butter (room temperature)
- 2 cups Granulated White Sugar
- 2 Large Eggs
- 1 teaspoon Pure Vanilla Extract
- 1 1/4 cup Milk
- 2 3/4 cups All-Purpose Flour
- 2 1/2 teaspoons Baking Powder
- 1 teaspoon Salt
- 3 ounces Red Gelatin Powder (Cherry or Strawberry)
- 3 ounces Blue Gelatin Powder (Berry)
- 1 cup Butter (room temperature) for frosting
- 1 teaspoon Pure Vanilla Extract for frosting
- 5 cups Confectioners' Sugar for frosting
- 1–2 tablespoons Milk for frosting
- Red and Blue Icing Gel or Food Coloring
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, cream together the butter and sugar until fluffy. Add eggs one at a time with vanilla extract.
- In another bowl, whisk together flour, baking powder, and salt. Gradually combine with wet ingredients alternating with milk.
- Divide the batter into three bowls; mix red gelatin into one, blue gelatin into another, leaving the last plain.
- Layer the batters in the cupcake liners: red on bottom, plain in middle, blue on top.
- Bake for about 18 minutes or until a toothpick comes out clean. Cool completely before frosting.
