Ingredients

  • 2 cups dry red lentils, rinsed & soaked overnight
  • 1 medium white onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • ½ tablespoon chickpea flour
  • 1 teaspoon coriander
  • 2 tablespoons Italian seasoning
  • Sea salt & pepper to taste
  • 45 tablespoons olive oil for frying
  • ⅓ cup runny tahini
  • 4 tablespoons lemon juice
  • 12 cloves garlic for dip
  • Sea salt to taste for dip
  • Water to thin for dip
  • Fresh parsley, minced for dip
  • Squeeze of lemon for dip

Instructions

  1. Rinse and soak lentils overnight. Drain and place in a food processor.
  2. Add diced onion, minced garlic, tomato paste, chickpea flour, coriander, Italian seasoning, sea salt, and pepper to the processor. Pulse until combined but slightly chunky.
  3. Form small patties with your hands and place on parchment paper.
  4. Heat olive oil in a frying pan over medium heat. Fry each patty for about 3–4 minutes per side until golden brown.
  5. For the dip, mix tahini, lemon juice, minced garlic, salt, and enough water to achieve desired consistency.
  6. Serve warm garnished with fresh parsley.
