Ingredients
- 5 pieces of bacon
- 1 lb ground beef
- 1/4 cup butter
- 1/4 cup diced onion
- 2 sticks diced celery
- 6 tablespoons flour
- 4 cups chicken broth
- 1 cup heavy cream
- 1 lb Yukon potatoes (peeled & diced)
- 2 cups shredded sharp cheddar cheese
- Salt & pepper to taste
Instructions
- In a large soup pot, cook the bacon over medium-high heat until crispy. Transfer to paper towels, leaving fat in the pot.
- Brown the ground beef in the same pot. Drain excess fat.
- Sauté onion and celery in butter until softened.
- Stir in garlic and flour; cook for about 2 minutes.
- Gradually whisk in chicken broth until smooth.
- Add heavy cream, Worcestershire sauce, potatoes, and browned beef back into the pot. Bring to a boil then simmer until potatoes are tender.
- Off heat, gradually mix in cheddar cheese until melted and creamy.
- Season with salt and pepper; stir in reserved bacon or use as garnish.
