  • 5 pieces of bacon
  • 1 lb ground beef
  • 1/4 cup butter
  • 1/4 cup diced onion
  • 2 sticks diced celery
  • 6 tablespoons flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 lb Yukon potatoes (peeled & diced)
  • 2 cups shredded sharp cheddar cheese
  • Salt & pepper to taste

Instructions

  1. In a large soup pot, cook the bacon over medium-high heat until crispy. Transfer to paper towels, leaving fat in the pot.
  2. Brown the ground beef in the same pot. Drain excess fat.
  3. Sauté onion and celery in butter until softened.
  4. Stir in garlic and flour; cook for about 2 minutes.
  5. Gradually whisk in chicken broth until smooth.
  6. Add heavy cream, Worcestershire sauce, potatoes, and browned beef back into the pot. Bring to a boil then simmer until potatoes are tender.
  7. Off heat, gradually mix in cheddar cheese until melted and creamy.
  8. Season with salt and pepper; stir in reserved bacon or use as garnish.
