Ingredients
- 1 lb dry navy beans (soaked overnight)
- 12 oz applewood smoked bacon (chopped)
- 1 sweet onion (chopped)
- 2 cups chicken stock
- 1 cup bourbon (or additional chicken stock)
- 3/4 cup BBQ sauce
- 1/4 cup ketchup
- 2 tablespoons molasses
- 3 tablespoons pure maple syrup
Instructions
- Soak the beans overnight in a large pot of water. Drain and rinse before use.
- In a skillet, brown chopped bacon until crispy. Remove and drain on paper towels.
- In the same skillet, caramelize chopped onion in the bacon grease for about 15 minutes, then add minced garlic for an additional 2 minutes.
- In a large pot, combine soaked beans, chicken stock, bourbon (if using), BBQ sauce, ketchup, molasses, and maple syrup. Bring to a boil then transfer to your crockpot.
- Stir in the cooked bacon along with onions and garlic into the crockpot.
- Cover and cook on high for 5-6 hours or low for 10-12 hours. Stir occasionally.
- For thicker sauce, let sit on warm for an additional 30 minutes before serving.
