- 4 boneless chicken thighs
- 1/2 lemon (zest and juice)
- 1/4 cup chicken broth
- 1/2 cup Jasmine rice (uncooked)
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/4 tsp crushed red pepper flakes
- 1/4 tsp paprika
- 1/2 tsp Italian seasoning
- 1 clove garlic (or 1 tsp minced)
- 1/4 cup water
Instructions
- Place chicken thighs at the bottom of the Crock-pot.
- In a bowl, mix lemon zest, lemon juice, and chicken broth; pour over chicken.
- Combine salt, pepper, garlic powder, onion powder, crushed red pepper flakes, paprika, and Italian seasoning in a small bowl; sprinkle over chicken.
- Add minced garlic on top.
- Cover and cook on high for 2–3 hours or low for 6–8 hours until chicken is tender.
- Twenty minutes before serving, add water and Jasmine rice; cook covered until rice is tender.
