- 2 tablespoons tomato paste (Optional)
- 6–8 cups chicken broth
- 6 oz pasta (I used Italian small shells)
- 1 cup heavy whipping cream
- 1/2–1 cup grated parmesan reggiano cheese
- 2 1/2–3 cups fresh spinach
Instructions
- Heat olive oil in a large pot over medium-high heat. Add chicken seasoned with Italian seasoning, salt, and pepper; cook until browned.
- Stir in diced onions, carrots, celery, sundried tomatoes, and garlic; cook until vegetables are translucent.
- Gradually sprinkle flour into the mixture while stirring. If using tomato paste, add it now.
- Slowly whisk in chicken broth to avoid lumps; deglaze the pan with a spoon.
- Bring to a boil; add pasta and simmer until cooked through and al dente.
- Stir in heavy cream, spinach, and Parmesan cheese; simmer for an additional five minutes.
- Taste and adjust seasoning before serving.
