  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1½ cups whole milk
  • 2 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons all-purpose flour
  • ½ teaspoon garlic powder
  • ¼ teaspoon thyme
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear in olive oil in a large skillet until golden brown.
  2. Cook rice in boiling chicken broth until tender.
  3. In the same skillet, make the sauce by melting butter and whisking in flour. Gradually add milk and remaining broth while stirring until thickened.
  4. Return the chicken to the skillet, spoon sauce over it, cover, and simmer for about 10 minutes.
  5. Serve hot over rice and garnish with fresh parsley.
