Description
A soft and fluffy keto-friendly bread made with cottage cheese and a warm cinnamon swirl. Low-carb, high-protein, and perfect for breakfast or snacks.
Ingredients
½ cup cottage cheese (full-fat)
3 large eggs (room temperature)
¼ tsp cream of tartar
2 tbsp almond flour
½ tsp baking powder
2 tbsp erythritol or stevia
1 ½ tsp ground cinnamon
½ tsp vanilla extract
1 tbsp butter (melted)
Pinch of salt (optional)
Instructions
1. Separate eggs and place whites in one bowl with cream of tartar.
2. In another bowl, blend yolks with cottage cheese, vanilla, and melted butter.
3. Add almond flour, baking powder, sweetener, and salt to yolk mixture.
4. Whip egg whites until stiff peaks form.
5. Gently fold whites into the yolk mixture.
6. Make cinnamon paste by mixing sweetener, cinnamon, and a splash of water.
7. Layer half the batter in a lined pan, swirl in half the cinnamon paste, repeat.
8. Use a toothpick to swirl top.
9. Bake at 300°F (150°C) for 25–30 minutes until golden.
10. Cool on wire rack before slicing.
Notes
You can use monk fruit sweetener as a substitute for erythritol.
To make keto cinnamon rolls, spread batter, roll, slice, and bake individually.
