  • 4 boneless, skinless chicken thigh fillets
  • 5 cups romaine lettuce leaves
  • 1 red bell pepper
  • 1 large mango
  • 1 avocado
  • Fresh cilantro
  • 3 tablespoons olive oil
  • ½ cup freshly squeezed lime juice
  • ½ cup fresh chopped cilantro
  • 4 cloves garlic, crushed
  • 2 teaspoons honey
  • 1 teaspoon brown sugar
  • 1 teaspoon ground cumin
  • 1¼ teaspoons salt

Instructions

  1. In a mixing bowl, whisk together olive oil, lime juice, chopped cilantro, crushed garlic, honey, brown sugar, ground cumin, and salt.
  2. Pour one-third of the marinade over the chicken thighs in a shallow dish and let marinate for 15 minutes to 2 hours. Reserve remaining marinade for dressing.
  3. Heat oil in a grill pan over medium-high heat. Grill chicken for 5–6 minutes per side until golden and cooked through; set aside to rest.
  4. Sauté or grill sliced red peppers until tender.
  5. In a separate bowl, mix diced mango, avocado, sliced green onion with reserved dressing.
  6. Slice grilled chicken and assemble salad with romaine lettuce leaves, grilled peppers, mango avocado salsa on top.
