- 5 cups romaine lettuce leaves
- 1 red bell pepper
- 1 large mango
- 1 avocado
- Fresh cilantro
- 3 tablespoons olive oil
- ½ cup freshly squeezed lime juice
- ½ cup fresh chopped cilantro
- 4 cloves garlic, crushed
- 2 teaspoons honey
- 1 teaspoon brown sugar
- 1 teaspoon ground cumin
- 1¼ teaspoons salt
Instructions
- In a mixing bowl, whisk together olive oil, lime juice, chopped cilantro, crushed garlic, honey, brown sugar, ground cumin, and salt.
- Pour one-third of the marinade over the chicken thighs in a shallow dish and let marinate for 15 minutes to 2 hours. Reserve remaining marinade for dressing.
- Heat oil in a grill pan over medium-high heat. Grill chicken for 5–6 minutes per side until golden and cooked through; set aside to rest.
- Sauté or grill sliced red peppers until tender.
- In a separate bowl, mix diced mango, avocado, sliced green onion with reserved dressing.
- Slice grilled chicken and assemble salad with romaine lettuce leaves, grilled peppers, mango avocado salsa on top.
