  • 1 tablespoon olive oil
  • 1 pound ribeye steak, thinly sliced
  • 1 medium onion, sliced
  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup beef broth
  • 1/2 cup heavy cream
  • 1 cup provolone cheese, shredded
  • 1/4 cup Parmesan cheese, grated

Instructions

  1. Boil the tortellini in salted water according to package instructions (3-5 minutes). Drain and set aside.
  2. In a skillet, heat olive oil over medium-high heat. Cook the ribeye steak for 3-4 minutes until browned; remove and set aside.
  3. In the same skillet, sauté onions and bell peppers for about 5-6 minutes until softened. Add garlic and cook for an additional minute.
  4. Pour in beef broth; simmer for 2-3 minutes. Reduce heat and stir in heavy cream until thickened. Add provolone and Parmesan cheeses; stir until melted.
  5. Return steak to the skillet and add drained tortellini. Toss gently to coat everything in the sauce; heat through for another 2-3 minutes.
  6. Serve hot, garnished with chopped parsley.
