Ingredients

  • 1/2 cup butter (melted)
  • 1 cup light brown sugar (packed)
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup shredded carrots
  • 4 ounces cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk

Instructions

  1. Preheat oven to 350°F and prepare an 8×8 baking pan with non-stick spray or parchment paper.
  2. In a mixing bowl, combine melted butter and brown sugar until smooth. Add egg and vanilla; mix well.
  3. In another bowl, whisk together flour, cinnamon, baking powder, and salt. Gradually add dry ingredients to the wet mixture; fold in shredded carrots.
  4. In a separate bowl, beat cream cheese and granulated sugar until creamy. Mix in egg yolk and remaining vanilla.
  5. Pour half of the carrot cake batter into the pan. Spread cream cheese mixture on top; dollop remaining batter over and swirl gently with a knife.
  6. Bake for about 40 minutes or until a toothpick comes out clean. Allow to cool before slicing into squares.
