- 1 cup light brown sugar (packed)

- 1 cup shredded carrots
- 4 ounces cream cheese (room temperature)
- 1/4 cup granulated sugar
- 1 large egg yolk
Instructions
- Preheat oven to 350°F and prepare an 8×8 baking pan with non-stick spray or parchment paper.
- In a mixing bowl, combine melted butter and brown sugar until smooth. Add egg and vanilla; mix well.
- In another bowl, whisk together flour, cinnamon, baking powder, and salt. Gradually add dry ingredients to the wet mixture; fold in shredded carrots.
- In a separate bowl, beat cream cheese and granulated sugar until creamy. Mix in egg yolk and remaining vanilla.
- Pour half of the carrot cake batter into the pan. Spread cream cheese mixture on top; dollop remaining batter over and swirl gently with a knife.
- Bake for about 40 minutes or until a toothpick comes out clean. Allow to cool before slicing into squares.
