  • 6 bone-in, skin-on chicken thighs
  • 1½ cups long-grain white rice
  • 1 cup coconut milk
  • 2 teaspoons ground allspice
  • 1 Scotch bonnet pepper (or habanero)
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • Fresh thyme
  • Vegetable oil

Instructions

  1. Season chicken thighs with salt, black pepper, paprika, allspice, garlic powder, and onion powder.
  2. In a large skillet or Dutch oven, heat oil over medium heat; sauté chopped onion until soft. Add garlic and bell peppers; cook until fragrant.
  3. Add the seasoned chicken to the skillet and brown on both sides.
  4. Stir in thyme, allspice, rice, chicken broth, and coconut milk; bring to a boil.
  5. Cover and reduce heat; simmer for about 30 minutes or until rice is tender.
  6. Optional: Stir in frozen peas in the last few minutes of cooking. Garnish with green onions and cilantro before serving.
