Ingredients
- 3 chicken breasts, cut into strips
- 1 cup orzo pasta
- 1 cup chicken broth
- ¼ cup heavy cream
- 3 tbsp Parmesan cheese
- 1–3 tbsp Cajun seasoning
- 1 tsp salt
- 1 tbsp olive oil
- ½ tbsp butter
- 1 large onion, finely diced
- 2 cloves garlic, minced
- 2 tbsp chopped sun-dried tomatoes
- 1 tbsp tomato paste
- 1 cup shredded spinach
Instructions
- Season chicken strips with Cajun seasoning and salt.
- Heat olive oil and butter in a Chef's pan over medium heat; cook seasoned chicken until browned (5-7 minutes).
- Add diced onion, minced garlic, sun-dried tomatoes, and tomato paste; cook for another 5 minutes.
- Stir in orzo and pour in chicken broth; bring to simmer and cover for 20 minutes.
- Once orzo is nearly tender, mix in spinach, heavy cream, and Parmesan cheese; stir until creamy.
