Ingredients

Scale
  • ½ cup unsalted butter (browned)
  • 1 cup warm whole milk
  • ½ cup granulated sugar (divided)
  • 2¼ tsp active dry yeast
  • 1 large egg + 1 egg yolk
  • ¾ cup pumpkin puree
  • 5 cups all-purpose flour
  • 1 tsp kosher salt
  • 1 cup dark brown sugar (filling)
  • ¼ cup pumpkin puree (filling)
  • 1 tbsp ground cinnamon (filling)
  • 1 tbsp pumpkin pie spice (filling)
  • ¼ cup unsalted butter (softened, filling)
  • 8 oz cream cheese (softened, icing)
  • ¼ cup unsalted butter (softened, icing)
  • 2 cups powdered sugar (icing)
  • 2 tsp vanilla essence (icing)
  • ½ tsp pumpkin pie spice (icing)

Instructions

  1. Prepare the brown butter by warming unsalted butter in a pot until golden brown. Set aside to cool.
  2. In a mixing bowl, combine warm milk, 2 tbsp sugar, and yeast. Let it froth for about 5 minutes.
  3. Add remaining sugar, brown butter, pumpkin puree, egg, egg yolk, flour (starting with 4¾ cups), and salt. Knead until smooth (5–6 minutes) and let rise in a warm place until doubled in size (about 1 hour).
  4. For the filling, mix dark brown sugar, pumpkin puree, cinnamon, and pumpkin pie spice into a smooth paste.
  5. Roll dough into a rectangle; spread softened butter and filling evenly over the surface.
  6. Roll tightly into a log and slice into 12 pieces. Place in a greased baking pan and let rise again while preheating the oven to 350°F (about 30 minutes).
  7. Bake for approximately 30 minutes or until golden brown.
  8. Prepare the icing by whisking cream cheese and softened butter together; add powdered sugar, vanilla essence, and pumpkin pie spice until smooth.
  9. Coat warm rolls generously with icing before serving.
