  • 1 recipe blueberry pie filling (about 3 cups)
  • 3 uncooked 9-inch pie crusts
  • 1½ cups fresh blueberries
  • ½ cup powdered sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla paste
  • Juice and zest of 1 lemon
  • 1 teaspoon ground cinnamon
  • 1 egg (for egg wash)
  • Coarse sugar (to sprinkle on top)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease your pie dish.
  2. In a mixing bowl, combine blueberries, powdered sugar, cornstarch, vanilla paste, lemon juice, and cinnamon. Fold gently to coat.
  3. Roll out two crusts on a floured surface; place one in the pie dish.
  4. Pour the blueberry filling into the bottom crust evenly.
  5. Roll out the third crust; cut it into strips for a lattice design or lay it whole over the filling.
  6. Brush the top with an egg wash made from whisking together an egg and water.
  7. Sprinkle coarse sugar on top before baking for added texture.
