Ingredients
Scale
- 1 cup cottage cheese (full-fat or low-fat)
- 3 large eggs
- 1/2 cup rolled oats (optional)
- 1 cup fresh or frozen blueberries
- 2 tbsp honey or maple syrup
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1 tsp lemon zest
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking dish.
- Mix the Wet Ingredients: In a bowl, whisk together cottage cheese, eggs, honey, vanilla, and lemon zest until smooth.
- Add Dry Ingredients: Stir in the oats (if using), baking powder, and cinnamon until well combined.
- Fold in Blueberries: Gently fold in the blueberries without crushing them.
- Bake: Pour the mixture into the prepared baking dish and top with extra blueberries. Bake for 35–45 minutes, until golden and set.
- Cool and Slice: Let it cool for 10 minutes before slicing. Serve warm or refrigerate for later.
Notes
For a smoother texture, blend the cottage cheese and eggs before mixing with other ingredients. To make this bake dairy-free, use plant-based cottage cheese and skip the optional oats for a lower-carb version.
