  • 2 pounds beef chuck
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • ¼ cup apple cider vinegar
  • 2 teaspoons garam masala
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • ½ teaspoon ground mustard
  • ½ teaspoon cayenne pepper
  • ½ teaspoon ground ginger
  • ½ teaspoon cinnamon
  • 1 teaspoon salt
  • ½ teaspoon freshly cracked black pepper
  • 3 tablespoons neutral oil
  • 1 cup low-sodium beef stock (plus more as needed)

Instructions

  1. Cut the beef chuck into 2-inch cubes and season with salt and pepper.
  2. Heat oil in a large skillet over medium-high heat and brown the beef on all sides. Remove and set aside.
  3. In the same skillet, sauté onions until caramelized. Add minced garlic and cook until softened.
  4. Stir in the spices and tomato paste, cooking until fragrant.
  5. Deglaze with apple cider vinegar and return the beef to the skillet with beef stock.
  6. Bring to a boil, reduce heat, cover, and simmer for about an hour until tender.
  7. Adjust seasoning as needed and serve hot over basmati rice or with naan.
