  • 2 medium sweet potatoes
  • 1 large yellow onion
  • 1 tablespoon olive oil
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce (divided)
  • 1 medium head broccoli
  • Seasonings: salt, garlic powder, chipotle powder

Instructions

  1. Preheat your oven to 400°F.
  2. Peel and chop the sweet potatoes into 1/2" chunks and slice the onion into 1-inch pieces.
  3. On a lined sheet pan, toss sweet potatoes and onions with olive oil, salt, garlic powder, and chipotle powder. Bake for 20 minutes.
  4. Add chopped broccoli to the pan and place chicken breasts brushed with BBQ sauce on the sheet. Bake for an additional 15-20 minutes until cooked through.
  5. Shred the chicken using forks directly on the pan and mix with remaining BBQ sauce before serving.
