Ingredients
- 2 medium sweet potatoes
- 1 large yellow onion
- 1 tablespoon olive oil
- 1 pound boneless skinless chicken breasts
- 1/2 cup BBQ sauce (divided)
- 1 medium head broccoli
- Seasonings: salt, garlic powder, chipotle powder
Instructions
- Preheat your oven to 400°F.
- Peel and chop the sweet potatoes into 1/2" chunks and slice the onion into 1-inch pieces.
- On a lined sheet pan, toss sweet potatoes and onions with olive oil, salt, garlic powder, and chipotle powder. Bake for 20 minutes.
- Add chopped broccoli to the pan and place chicken breasts brushed with BBQ sauce on the sheet. Bake for an additional 15-20 minutes until cooked through.
- Shred the chicken using forks directly on the pan and mix with remaining BBQ sauce before serving.
