  • 14 oz. sweetened condensed milk
  • 1/2 cup sour cream (at room temperature)
  • 1/2 tsp. vanilla extract
  • 1 cup mashed bananas
  • 2 tablespoons fresh parsley (finely chopped)

Instructions

  1. Preheat the oven to 300°F (150°C) and line an 8-inch square baking dish with parchment paper.
  2. In a mixing bowl, combine the gluten-free graham cracker crumbs, light brown sugar, and melted butter. Press into the bottom of the prepared dish and refrigerate.
  3. Beat room temperature cream cheese until smooth, then mix in sweetened condensed milk, sour cream, and vanilla until combined. Gently fold in mashed bananas.
  4. Pour the filling over the chilled crust and bake for about 40 minutes until set and golden on top. Cool completely before refrigerating for at least 4 hours.
