  • 1 cup packed brown sugar
  • 1 large egg (room temperature)
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1 cup all-purpose flour
  • 1 cup mashed overripe bananas (about 2 large)
  • 3/4 cup chocolate chips or chopped chocolate

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 baking pan with parchment paper and grease it lightly.
  2. In a mixing bowl, cream together softened butter and brown sugar until light and fluffy.
  3. Add the egg, vanilla extract, and salt; mix until combined.
  4. Gently stir in the flour until just incorporated—do not overmix.
  5. Fold in the mashed bananas and three-fourths of the chocolate chips.
  6. Pour the batter into the prepared baking pan and sprinkle the remaining chocolate chips on top.
  7. Bake for 33–37 minutes or until golden brown around the edges and set in the center.
  8. Allow to cool completely before slicing into squares.
