Ingredients

  • 2 large baking potatoes
  • 200g block of feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chilli flakes
  • 1 head of garlic
  • 1 lemon
  • 1 tbsp honey
  • 1/4 cup fresh basil

Instructions

  1. Preheat oven to 200C (390F).
  2. Wash and cube potatoes; par-boil in salted water for 6–8 minutes. Drain and let steam dry.
  3. Toss par-boiled potatoes with olive oil, thyme, oregano, salt, and pepper in a baking dish.
  4. Roast for 30–40 minutes until golden brown.
  5. Add feta cheese in the center and squeeze half the lemon juice over it.
  6. Roast for an additional 15 minutes while preparing garlic by mashing the roasted cloves.
  7. Stir mashed garlic and remaining lemon juice into the potatoes; drizzle with honey and garnish with basil before serving.
