  • 68 chicken drumsticks
  • 3 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 cup uncooked white rice
  • 1 and 1/3 cups chicken broth (low-sodium preferred)
  • 1/2 medium yellow onion, chopped
  • 34 cloves garlic, minced
  • Fresh lemon wedges

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix olive oil, brown sugar, smoked paprika, thyme, oregano, garlic powder, salt, and pepper to create a paste. Rub this over the chicken drumsticks.
  3. Sauté onion in butter in a saucepan until softened; add garlic and cook until fragrant. Transfer to a baking dish.
  4. Add rice and remaining salt to the onion mixture. Boil broth and water; pour over rice.
  5. Place chicken on top of the rice along with half of the lemon wedges. Cover with foil and bake for 30 minutes.
  6. Remove foil and bake uncovered for an additional 20 minutes until chicken is cooked through and rice is tender.
