Ingredients

  • 8 cups crisp Romaine or Green Leaf lettuce, chopped
  • 2 medium tart red apples, cored and diced
  • 1 cup dried cranberries
  • 4 ounces crumbled feta cheese
  • 1 cup chopped pecans, toasted
  • 8 slices bacon, cooked and crumbled
  • 2/3 cup extra virgin olive oil
  • 1/3 cup apple cider vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon Kosher salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. To make the dressing, combine olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper in a jar. Seal tightly and shake until mixed.
  2. In a large mixing bowl, combine chopped lettuce, diced apples, cranberries, toasted pecans, crumbled bacon, and feta cheese.
  3. Drizzle about 2/3 of the dressing over the salad and toss gently to coat. Serve immediately with remaining dressing on the side.
